i started makin this when i was in college after makin it in a class[i took food service in college...we took cookin classes] over the years i have changed it some to make it more mine!!!! it takes a little time but is so worth it give it a try........

Ingredients For courden blue diane's way

  • 4-6 lg
    chicken breast halves, skinless and boneless
  • 4-6 oz
    turkey ham,diced
  • 1 pkg
    [8 oz] swiss cheese,grated
  • 1 Tbsp
    margarine
  • 1 tsp
    jarred garlic
  • 4-6 sm
    button mushroom,chopped fine
  • seasoned salt and fresh ground black pepper, to taste
  • 1 c
    bacon flavored bottled ranch dressing,thinned some with milk
  • 2 c
    baby swiss flavored cheese it crackers,crushed
  • 1 Tbsp
    bacon bits[jarred,finely crushed]

How To Make courden blue diane's way

    pre heat oven to 350... spray a cookie sheet with no stick spray set aside

    first take chicken 1/2 and pound thin between 2 pieces of plastic wrap set aside while doin that heat small pan add margarine when melted add mushrooms and garlic cook and stir til mushrooms release juices turn off let cool

    put ranch dressin in zip qt bag, put crackers crumbs and bacon bits in another qt bag

    on flat serface lay out all chicken pieces divided both ham and cheese evenly over chicken now spoon mushrooms evenly over that

    now take and roll each chicken piece up tuckin in each side to close put on plate..

    when all are rolled up put one at a time first in ranch coating well then in to crackers coat well now place each one on cookie sheet

    now bake 45 min test for doneness.... by piercin a piece of the chicken with sharp knife if juices run clear it is done........ enjoy

    i served this with twice baked tater, steamed broccoli and fresh fruit salad
