This is a great company-worthy dinner casserole. Serve with a green vegetable or salad. ***Prep time does not include rice and chicken cooking time.

Ingredients For company's coming chicken and wild rice casserole

  • 1 c
    long grain & wild rice mix
  • 1/2 c
    onion, finely chopped
  • 1/2 c
    butter
  • 1/4 c
    flour
  • 1 can
    6-oz. sliced mushrooms, drained
  • chicken broth
  • 1/2 c
    light cream or evaporated milk
  • 3 c
    cooked chicken breast, diced
  • 1/4 c
    pimentos, drained and diced
  • 2 Tbsp
    fresh parsley, chopped
  • 1/2 tsp
    salt (or more to taste)
  • 1/4 tsp
    pepper
  • 1/2 c
    slivered almonds

How To Make company's coming chicken and wild rice casserole

    Prepare rice mix according to pkg. instructions.

    Meanwhile, saute onions in butter until translucent and tender. Remove onions from heat and stir in flour. Mix well until all trace of flour disappears. Drain mushrooms, reserving liquid, and add enough chicken broth to mushroom liquid to make 1 1/2 cups.

    Gradually add liquid to onion/flour mixture and then add cream stirring until mixture is thickened.

    Add rice, mushrooms, chicken, pimento, parsley, salt and pepper.

    Prepare a 2 qt. casserole and add chicken mixture. Sprinkle with almonds.

    Bake at 350 degrees F for 25-30 minutes or until heated through.
