The nice thing about this dish is that you can prep it the day before, then cover, stick in fridge, and cook it the next day. Great tasting chicken and taters, from kitchen-to-table in under an hour. 1 lgpotato, russet variety

1 - 2 pinchdried oregano

salt, kosher variety, fine grind, to taste

2 clovegarlic minced

2 Tbsplemon juice, freshly squeezed

1 tspolive oil, extra virgin variety

1 tspsalt, kosher variety, fine grind

1/2 tspblack or white pepper, freshly ground

1/2 tsppaprika, smoked variety, divided

1/2 tspdried oregano

1/2 tspdried thyme

1 - 2 pinchcayenne pepper, or to taste

2 mdchicken thighs

2 mdchicken legs

1PREP/PREPARE

2For this recipe, you will need an ovenproof skillet, medium-size baking dish, or rimmed baking sheet.

3Gather your ingredients (mise en place).

4Place a rack in the middle position and preheat the oven to 425f (220c).

5THE TATERS

6Add the olive oil, oregano, parsley, and salt to a bowl.

7Place a pot of lightly salted water over high heat and bring to a rolling boil. While the water is coming up to the boil cut the potato into cubes about 1.5 inches (4cm). Toss into the boiling water and cook for 5 minutes.

8Thoroughly drain, and then toss with the oil and spices.

9THE CHICKEN

10Add all of the spice ingredients to a bowl and mix to combine.

11Place the chicken into an ovenproof skillet baking dish, or baking sheet, drizzle on the spice ingredients, and rub it into the chicken. Then, add the taters.

12As you can see from the photo, I like to sprinkle on a bit of additional smoked paprika and a touch of salt… up to you.

13Place in the preheated oven and cook until the skin on the chicken is crispy, and the internal temperature (instant-read thermometer) reads 165f (75c), about 45 – 50 minutes.
