1This recipe came from Everyday Food Magazine. We had it with baked chicken the other night and I think it is going to be a favorite because it is so light and would work great in fish tacos and with other foods--ribs, steak, etc.

Ingredients For coleslaw

  • 4 c
    shredded cabbage and carrots (or 1 package coleslaw mix)
  • salt and pepper to taste
  • 4 Tbsp
    olive oil
  • 2 Tbsp
    white-wine vinegar

How To Make coleslaw

  • 1
    Dress cabbage mixture with salt and pepper, olive oil, and vinegar, then toss.

    Refrigerator until serving.
