Ingredients For coconut curry chicken thighs w sweet chili sauce

  • 6
    chicken thighs
  • 2 Tbsp
    fresh ginger minced
  • 1 Tbsp
    lemongrass paste
  • 4 clove
    garlic minced
  • 1 tsp
    white pepper
  • 1/4 c
    soy sauce
  • 2 Tbsp
    sugar
  • 2 Tbsp
    curry powder
  • 1 can
    coconut milk
  • 1/2 c
    sweet chili sauce
  • cilantro leaves for garnish
  • lime wedges

How To Make coconut curry chicken thighs w sweet chili sauce

  • 1
    mix the ginger, lemongrass, garlic, white pepper, soy sauce, sugar, curry powder and coconut milk together.

    Poke holes in the chicken meat with a fork. Marinate the chicken in the curry mixture for 6 hours or overnight.

    Preheat oven 375 degrees. Place chicken skin side up with the marinade in a baking pan. Place in oven and bake 25 minutes. Remove from oven and brush the tops of chicken with sweet chili sauce. Place back in oven for about 10 minutes. Serve with lime wedges and garnish with cilantro.
