6chicken thighs

2 Tbspfresh ginger minced

1 Tbsplemongrass paste

4 clovegarlic minced

1 tspwhite pepper

1/4 csoy sauce

2 Tbspsugar

2 Tbspcurry powder

1 cancoconut milk

1/2 csweet chili sauce

cilantro leaves for garnish

How To Make coconut curry chicken thighs w sweet chili sauce

1mix the ginger, lemongrass, garlic, white pepper, soy sauce, sugar, curry powder and coconut milk together.

2Poke holes in the chicken meat with a fork. Marinate the chicken in the curry mixture for 6 hours or overnight.

3Preheat oven 375 degrees. Place chicken skin side up with the marinade in a baking pan. Place in oven and bake 25 minutes. Remove from oven and brush the tops of chicken with sweet chili sauce. Place back in oven for about 10 minutes. Serve with lime wedges and garnish with cilantro.
