Ingredients For coconut chicken adobo

2/3 crice vinegar

1 cancoconut milk

1/4 csoy sauce

8 clovegarlic smashed

1/2 csugar
-
2inch piece of turmeric or ginger peeled and sliced

4birds eye red chilies smashed

1whole chicken cut into 8 pieces

fresh rice noodles for serving
How To Make coconut chicken adobo

1Mix the rice vinegar, coconut milk, soy sauce, sugar, garlic, turmeric, bay leaves and red chilies together in a large bowl. Add the chicken and coat well. Let marinate at least 3 hours or overnight

2Transfer the chicken and marinade in a large deep saucepan. Bring to a boil and reduce to a simmer and simmer for 30 minutes.

3Remove the chicken and stain the sauce discarding any solids. Bring sauce to a boil and reduce to thicken. Serve over rice noodles with sauce
