Adobo is a Filipino style of cooking that uses a lot of garlic and vinegar. Make a great tasting sauce.

Ingredients For coconut chicken adobo

  • 2/3 c
    rice vinegar
  • 1 can
    coconut milk
  • 1/4 c
    soy sauce
  • 8 clove
    garlic smashed
  • 1/2 c
    sugar
  • 2
    inch piece of turmeric or ginger peeled and sliced
  • 4
    birds eye red chilies smashed
  • 1
    whole chicken cut into 8 pieces
  • fresh rice noodles for serving

How To Make coconut chicken adobo

  • 1
    Mix the rice vinegar, coconut milk, soy sauce, sugar, garlic, turmeric, bay leaves and red chilies together in a large bowl. Add the chicken and coat well. Let marinate at least 3 hours or overnight
  • 2
    Transfer the chicken and marinade in a large deep saucepan. Bring to a boil and reduce to a simmer and simmer for 30 minutes.

    Remove the chicken and stain the sauce discarding any solids. Bring sauce to a boil and reduce to thicken. Serve over rice noodles with sauce
