citrus chicken and rice

A real family pleaser that is quick and easy to make. I have found that the steam baking tends to remove the browning color from the chicken. Don't know if I just need to brown it deeper of if this will always. Whatever the cause it doesn't hurt the flavors at all. Try placing sauteed orange slices on top as it just adds a nice touch.

Ingredients For citrus chicken and rice

4boneless skinless chicken breasts

1 3/4 cchicken broth

1/2 corange juice

1/2 cchopped onion

1 cuncooked long-grain white rice. well rinsed

3 Tbspchopped fresh parsley. optional
How To Make citrus chicken and rice

1Cook chicken over medium high heat (10 minutes or until brown). Set aside.

2Add broth, juice, onion and rice to same pan. Cover and cook over low heat: 10 minutes.

3Return chicken to skillet. Cover and cook 10 minutes or until chicken and rice are cooked.

4Stir in parsley prior to serving.
