My stepmother use to make this for us and we just loved it. I've changed a few things, like she would fry the chicken and I boil it to make it more health friendly. Enjoy!

Ingredients For cindi's chicken adobo

20 to 25 chicken drumettes

1/2 cup soy sauce

1/2 cup apple cider vinegar

1/2 cup sugar (or to taste)

1/2 cup water (water from boiled chicken)

4 cloves minced garlic

4 bay leaves
-
1 teaspoon freshly ground black pepper (or to taste)
How To Make cindi's chicken adobo

1Place chicken in large pot and fill with water to cover; boil for 15 minutes.

2In a medium bowl, stir together well the soy sauce, vinegar, pepper, garlic and sugar. Mix until the sugar is dissolved.

3Now drain the chicken, saving 1/2 cup of the water. Replace chicken back into the pot. Add the water to the soy sauce mixture, then pour over chicken in pot. Top with the bay leaves and boil for 30 minutes over low to medium heat. Check often to make sure nothing is sticking on the bottom. Serve with or over steamed rice.
