Today for dinner I came up with something really good and hubby loved it so that's a plus.

We really loved this way to serve a chicken breast. Everything is fresh and yummy. The chicken breast comes out of the foil pack so juicy. It's a little on the plain side but the guacamole on top is what adds tons of flavor. This is a delicious and healthy way to serve chicken.

Ingredients For cilantro guacamole chicken
- CHICKEN

2 to 4chicken breasts, boneless and skinless

1/2 tspblack pepper
-
1/4 tspsalt

1 bunch(approximately 12 oz) fresh cilantro sprigs, stems left intact
-
2small ripe plum tomatoes, finely chopped
-
6-12 Tbspolive oil (3 tablespoons over each chicken )
- GUACAMOLE
-
2Haas avocados
-
1/2lime juice
-
3 Tbspchopped red onion
-
1 clovegarlic, chopped
-
2 Tbspchopped cilantro
-
3 Tbspchopped tomatoes
-
1 pinchsalt
How To Make cilantro guacamole chicken

1Preheat over to 350. Sprinkle chicken with pepper and salt.

2Cut 2-4 pieces of heavy-duty foil (each large enough to enclose 1 breast half).

3Place chicken in center of each piece of foil. Put a couple of cilantro leaves on the side of chicken. Then put the 3 tablespoons of olive oil on the top of chicken.

4Fold foil over chicken and place on baking sheet.

5Cook for 45 minutes until no longer pink.

6While chicken is cooking, prepare guacamole.

7Remove cilantro from chicken; discard cilantro. Rewrap chicken to keep warm.

8To serve, place unwrapped chicken on serving platter and top with guacamole. Garnish with chopped tomatoes and enjoy. :)
