A great cook, by the name of Terrie Hoelscher shared a similar recipe on JAP. I used hers as a base and tweaked it. This is an amazing casserole. Enjoy!

Ingredients For christy's cashew chicken casserole

3celery stalks (chopped)

1onion (medium-diced)

2 Tbspbutter

2 croasted chicken (chopped)

1 canchop suey vegetables (14 oz)

1 canwater chestnuts (small can)

3 Tbspsoy sauce
-
3 cancream of mushroom soup

1/2 cchicken broth
-
3/4 chalf & half
-
1 1/2 cchow mein noodles

1 1/2 cwhole cashews (roasted)

3 cwhite rice (cooked)
How To Make christy's cashew chicken casserole

1Preheat oven to 350.

2In a large skillet, saute celery and onion in butter until tender and translucent.

3Add remaining ingredients (except rice) and simmer on low for about 15 minutes.

4Pour in 13x9 pan. Sprinkle with a handful of chow mein noodles and cashews and bake for 40 minutes.

5Prepare rice according to package.

6Let casserole cool down for about 10 minutes and serve over rice.
