This recipe evolved from left over Pork Roast. I didn't have enough Pork so I added a can of White Meat Chunk Chicken, two large onions & it became a meal for 6 to 8 people. Those of you that are familiar with my style of cooking, know that I hate to throw food away, so I came up with this creative way to use left over pork Roast. When I was done, I had enough for 2 meals, First day I served it with onion rings, & the second day I served it with Broccoli Slaw. Not a bad idea for left overs. I toasted the buns, for a little crunchy texture, used my favorite BBQ Sauce & WOW what a meal.

Ingredients For chopped bbq pork & chicken on toasted kaiser buns

6 slicelean pork roast sliced thick (about 6-8 ounces)

1 can12 ounce chunk white meat chicken, drained

2 lgonions, peeled, halved, and sliced then quartered

1 bottle18 ounce sweet baby ray's honey bbq sauce

2 Tbspcanola or olive oil
-
2 tspgarlic powder (not garlic salt)

1 1/2 tspcoarse black pepper

6-8kaiser buns or hamburger buns, toasted
How To Make chopped bbq pork & chicken on toasted kaiser buns

1Peel onions, cut in half then slice into medium thick slices, then cut slices in halves.

2Add oil to an 8 inch skillet. Then add the sliced onions, and cook over low heat.

3In the mean time, slice the pork slices into medium thick strips, then cube the strips, then add to the skillet with onions.

4Drain canned chicken, and slightly shred the chunk pieces with fingers, and add to the skillet.

5Continue to cook over low heat, and separate the onion rings as they cook.

6When onions become translucent add the garlic powder, black pepper and Barbeque Sauce.

7Stir until mixture is completely heated through.

8Remove from heat and serve on toasted Buns with your favorite side items, like Cole Slaw or onion Rings or French Fries.
