My mother passed this recipe down to me...she was in a Chinese cooking class in Eugene Oregon back in the 80s. She has since made this many times for potlucks, with everyone always wanting the recipe. I hope you enjoy this one as I do.

Ingredients For chinese chicken salad

2 lgchicken breasts, meat torn into slivers

2 ozchinese rice sticks

1 smhead of lettuce shredded

4 stalksgreen onions chopped

2 Tbsptoasted almonds
-
2 Tbspsesame seeds (white)

now for the dressing
-
1 Tbsphoisin sauce
-
1/8 csesame oil
-
1/3 csalad oil
-
1/2 cred wine vinegar
-
1/3 csugar (or use truvia or 1/2 of each)
How To Make chinese chicken salad

1Fry the Rice Sticks quickly in hot oil being careful not to brown. Remove and drain on paper towels.

2Toss together in a bowl the chicken, lettuce, green onions and almonds (Save the sesame seeds for the end)

3Make the dressing..pour over the salad. Add the cooked rice sticks and carefully combine. Top with sesame seeds and serve. You can easily put this together for a potluck. Combine everything when you arrive.
