I like the combination of flavors in this recipe. The white beans really are good mixed with the other ingredients. I added the roasted red peppers myself, it gives the recipe a pretty color. We make this recipe all the time. It is one of Robin Miller's recipes. I used her picture for this recipe.

Ingredients For chicken with roasted shallots, tomatoes and white beans

4boneless skinless chicken breast halves

salt and pepper to taste

4shallots, cut into 1 inch pieces

2 cgrape or cherry tomatoes, halved

olive oil

1(15-ounce) can white beans, drained

1,1/4 cchicken broth, divided

1 tspfreshly chopped parsley leaves

1/2 croasted red peppers in a jar diced
How To Make chicken with roasted shallots, tomatoes and white beans

1Cook chicken in olive oil until done on both sides seasoned with salt and pepper. After done set aside and cook shallots, roasted red peppers, tomatoes until tender and add 1 cup of broth. Add the beans and 1/4 cup chicken broth and simmer until the juices are cooked down some. Pour over chicken in a serving platter and serve topped with fresh parsley.
