This is a really fast easy curry recipe without the spiciness of traditional curry dishes.. This is one of my 11 year sons favorite recipes. He likes to help make this dish with me as well.

Ingredients For chicken with peanut curry sauce

2 Tbspcanola oil

1 1/2 lbchicken breasts, cut into small pieces

8 ozfrozen cut green beans
- PEANUT CURRY SAUCE

1 1/2 ccoconut milk

1/2 clow sodium chicken broth

1 Tbspred curry paste
-
1/3 cchunky peanut butter
-
2 Tbspbrown sugar

2 Tbspfrsh squeezed lime juice
How To Make chicken with peanut curry sauce

1Heat oil in a large frying pan over medium heat. Add cut up chicken pieces, saute until cooked through (abut 5 mins.) Add green beans and continue cooking for 3 more minutes.

2While the chicken cooks, start the peanut curry sauce.

3In a medium mixing bowl, whisk together all the sauce ingredients. Pour over the chicken & green beans; stir to combine. Turn the heat to high and bring to a boil. Stir occasionally. Reduce heat and simmer until sauce is thickened (about 6-8 mins.)

4Serve chicken over rice.
