- FOR THE SALSA

3 pkg4 oz. pkgs. feta cheese, crumbled

1pint grape or cherry tomatoes, halved

1 jar4.75 oz. jar pitted kalamata olives

1/2 cfresh parsley, chopped

1/2 cfresh lemon juice
-
1/2 cextra-virgin olive oil
-
2 Tbspfresh oregano, chopped
- FOR THE CHICKEN

6skinless, bone-in chicken breast halves (8 oz each), seasoned

2lemons, cut into wedges
How To Make chicken with greek salsa

1Combine all salsa ingredients in a large blow; cover and chill.

2Saute chicken in 1/4 cup olive oil, breast side down, in a large roasting pan over medium high heat until browned. Turn chicken over.

3Squeeze chicken with lemon juice, then nestle the squeezed lemon wedges around the breasts. Roast chicken about 50 minutes or until it reaches 165 degrees. Transfer chicken and lemons to a large platter and top with salsa.
