3 Tbspfresh parsley, chopped

How To Make chicken with garlic and white wine butter sauce

1Preheat the oven to 400 degrees F. Mix the garlic and parsley and rub into the chicken under the skin all over. Season the chicken with salt and pepper.

2Place in a roasting pan. Drizzle the olive oil over the chicken and roast breast side down for 15 minutes.

3Turn to the side and roast for 15 more minutes. Turn to the other side and roast 15 minutes. Turn to breast side up and about 45 minutes until no longer pink.

4Remove the chicken to a carving board.

5Strain the pan dripping through a fine mesh strainer into a degreaser. and place the pan dripping into a saucepan. Add the white wine and lemon juice. Bring to a boil and boil about 3 minutes. Whisk in the butter one pat at a time.

6Carve the chicken and serve with the sauce over the pieces.
