This is the way that my mother fried her chicken. She was taught by her mother, my grandma. Mama said that really the "salt is the secret to good fried chicken." She would never use any shortening but CRISCO. Her fried chicken is still the talk at family dinners today. Hers was always crispy and was good even cold. My siblings tell me that my chicken taste closest to mama's. It's a great honor for me.

Ingredients For mama's southern fried chicken

  • 8-10
    chicken wings or cut up chicken pieces
  • salt, to taste
  • 2 c
    all purpose flour
  • 2 1/2-3 c
    crisco shortening
  • MY MOTHER'S SECRET: (1) USE CRISCO. (2) SALT CHICKEN WELL ON BOTH SIDES. (3) MAKE SURE THAT SHORTENING IS HOT BEFORE FRYING. (4) COOK UNCOVERED ON MEDIUM-HIGH HEAT. DO NOT OVERCROWD SKILLET.

How To Make mama's southern fried chicken

    Heat shortening in (iron) skillet or chicken fryer.

    Rinse chicken with water. Salt well on both sides.

    Place 2 cups flour in ziplock bag. Add about 4 chicken pieces and shake to coat. Repeat. Add more flour as needed.

    Fry 4-5 pieces of chicken in hot shortening for approximately 10-12 minutes on one side. Turn and fry and additional 6-8 minutes. Remove from skillet and place on rack or paper towels.
