Typically I make this with chicken but hey....we have a lot of leftover turkey. This is a cheater dump and heat recipe that I came up with a few years ago when everyone in my house was sick with a bad cold. An exceptional way to use up that leftover turkey from Thanksgiving.

Ingredients For chicken tortilla soup

1 - 2 lbcooked chicken or turkey, chopped

1 cansweet corn, drained

1 canblack beans, rinsed and drained

32 ozchicken stock
-
24 ozjar of salsa, medium heat (use the heat you like)

1 tspcumin
-
4 ozdiced green chiles
-
1 cancrushed tomatoes
-
1 - 3 Tbspkey lime juice (to taste)

sour cream
-
shredded cheddar cheese
-
tortilla chips
How To Make chicken tortilla soup

1Dump in the first seven in stock pot. Heat to boiling, simmer for about 15 minutes. Add lime juice one tablespoon at a time, to taste.

2Put in a bowl and add sour cream, cheese and crushed tortilla chips to taste. Enjoy!
