Ingredients For chicken thighs with mushrooms and riesling wine

  • 4
    bone-in chicken thighs
  • salt and pepper
  • 1 Tbsp
    olive oil
  • 1 tsp
    flour
  • 1 c
    mushrooms, chopped
  • 4 clove
    garlic, minced
  • 1/4 tsp
    ground cardamom
  • 1/4 tsp
    ground coriander
  • 1 c
    riesling wine
  • 1/2 c
    chicken stock
  • 2 Tbsp
    fresh parsley
  • 1 Tbsp
    butter
  • 1 Tbsp
    Dijon mustard
  • rice noodles or mashed potatoes, for serving

How To Make chicken thighs with mushrooms and riesling wine

    Season the chicken with salt and pepper. Add the oil to a skillet and brown the chicken, skin side down for about 10 minutes on med/low heat. Remove from the pan. Add the flour and cook, stirring, 3 minutes.

    Add the mushrooms and cook 2 minutes. Add the garlic, cardamom, and coriander and cook 2 minutes. Add the wine and stock and cook, stirring constantly, until no lumps of flour are left. Add the chicken back to the pan and cook 15 to 20 more minutes.

    Remove the chicken and stir in the parsley, butter, and Dijon mustard. Cook 1 minute. Serve the chicken over mashed potatoes, noodles, or rice and pour gravy over all.
