We love the taste of tamales but they're so time consuming to make. This recipe tastes pretty close to the real thing:)

Ingredients For chicken tamale casserole

  • 2 c
    shredded cheddar or mexican blend cheese, divided
  • 1/3 c
    milk
  • 1
    egg
  • 1 tsp
    ground cumin
  • 1/4 tsp
    ground red pepper
  • 1-14 oz
    can cream-style corn
  • 1-8.5 box
    corn muffin mix (such as jiffy)
  • 1-4 oz
    can chopped mild green chilies
  • 1/2 c
    diced onion
  • 1-10 oz
    can red enchilada sauce
  • 2 c
    cooked shredded chicken, turkey, or pork
  • 1/2 c
    sour cream
  • 1/2 c
    diced tomato- if desired
  • cooking spray

How To Make chicken tamale casserole

    1. Preheat oven to 400

    2. Combine 1/2 cup cheese and next 8 ingredients (through onions) in a large bowl, stirring just until moist. Pour into a 13 x 9 baking dish coated with cooking spray.

    3. Bake for 15-20 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with meat of choice; sprinkle with remaining cheese. Bake for 15 minutes or until cheese is melted. Remove from oven; let stand for 5 minutes. Cut into 8 serving pieces and top each with 1 tablespoon of sour cream and sprinkle with chopped tomatoes if desired,
