We love the taste of tamales but they're so time consuming to make. This recipe tastes pretty close to the real thing:)

Ingredients For chicken tamale casserole

2 cshredded cheddar or mexican blend cheese, divided

1/3 cmilk

1egg
-
1 tspground cumin
-
1/4 tspground red pepper
-
1-14 ozcan cream-style corn
-
1-8.5 boxcorn muffin mix (such as jiffy)

1-4 ozcan chopped mild green chilies
-
1/2 cdiced onion
-
1-10 ozcan red enchilada sauce
-
2 ccooked shredded chicken, turkey, or pork
-
1/2 csour cream
-
1/2 cdiced tomato- if desired

cooking spray
How To Make chicken tamale casserole

11. Preheat oven to 400

22. Combine 1/2 cup cheese and next 8 ingredients (through onions) in a large bowl, stirring just until moist. Pour into a 13 x 9 baking dish coated with cooking spray.

33. Bake for 15-20 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over top. Top with meat of choice; sprinkle with remaining cheese. Bake for 15 minutes or until cheese is melted. Remove from oven; let stand for 5 minutes. Cut into 8 serving pieces and top each with 1 tablespoon of sour cream and sprinkle with chopped tomatoes if desired,
