A family favorite espcially with my daughter. I use both green and red peppers for alittle color.

Ingredients For chicken taco rice

  • 1 lb
    chicken breast, cut in strips
  • 1 can
    (8oz) tomato sauce
  • 10 oz
    frozen corn kernels, thawed
  • 1
    red or green pepper, cut into strips
  • 1
    can chicken broth
  • 1 pkg
    taco seasoning mix
  • 1 1/2 c
    minute rice

How To Make chicken taco rice

  • 1
    Brown chicken in hot oil. Add broth, sauce and taco seasonings. Simmer 5 minutes. Add corn and pepper. Bring back to boil. Add rice, and remove from heat. Cover and let stand for 5 minutes. Stir before serving.

    Shredded cheese, lettuce, diced tomato, diced onion and sour cream cam be sprinkled on top for a more taco taste.
