This is a recipe that is quick to prepare, especially if you cut the chicken up beforehand. Healthier than beef stroganoff, but a similar taste!

Ingredients For chicken stroganoff

    boneless, skinless chicken breasts
  • 2 Tbsp
    onions, chopped
  • 2 tsp
    butter, melted
  • 1/2 lb
    fresh mushrooms, sliced
  • 1/4 c
    chicken broth
  • 1/4 c
    dry white wine
  • 1/4 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/4 tsp
    thyme
  • 1/4 c
    sour cream
  • hot cooked noodles

How To Make chicken stroganoff

    Cut the chicken into 1/2 inch strips; set chicken aside.

    Saute the onion in 2 teaspoons butter in a large skillet over medium heat for 2 minutes. Add the chicken, and saute 4 to 5 minutes or until chicken is browned. Remove the chicken from the skillet, reserving the drippings in the skillet. Set the chicken aside.

    Add 1 teaspoon butter to skillet; cook over medium heat until melted. Add the mushrooms and saute for 2 minutes. Stir in broth and the next 4 ingredients. Bring to a boil; reduce heat and simmer uncovered for 10 minutes or until the mushrooms are tender and the liquid is reduced by half. Add the reserved chicken; cook until thoroughly heated. Remove from heat and stir in the sour cream. Serve with noodles if desired.
