Ingredients For chicken stroganoff

  • 4
    boneless skinless chicken thighs
  • salt and pepper
  • 1 Tbsp
    olive oil
  • 1 lg
    onion diced
  • 4 clove
    garlic minced
  • 3 Tbsp
    butter
  • 2 Tbsp
    flour
  • 8 oz
    mushrooms sliced
  • 2 c
    beef broth
  • 1 Tbsp
    dijon mustard
  • 1 c
    sour cream
  • 8 oz
    egg noodles
  • 2 Tbsp
    butter
  • fresh parsley for garnish

How To Make chicken stroganoff

    Season the chicken with salt and pepper. Add Olive oil to a large skillet. Brown both sides about 4 minutes each side. Remove chicken to a plate.

    Add 3 tbsp. butter to skillet. Add the onions garlic, and mushrooms. Cook until mushrooms are browned. Add the flour and mix well. Pour in the beef broth and bring to a boil. Whisk to thicken.

    Stir in the mustard and reduce the heat to simmer. Whisk in the sour cream. Add the chicken back to the pan and simmer for 5 minutes.

    Taste and adjust for salt and pepper. Cook the noodles in boiling salted water. Drain and mix in the 2 tbsp of butter. Serve the chicken and gravy over noodles and garnish with parsley
