Ingredients For chicken stir fry with rice noodles

  • CHICKEN
  • 2
    boneless chicken thighs cut into strips
  • 1 tsp
    cornstarch
  • 1 tsp
    peanut oil
  • SAUCE
  • 2 Tbsp
    hoisn sauce
  • 1 tsp
    oyster sauce
  • 1 Tbsp
    dark soy sauce
  • 1/2 tsp
    sesame oil
  • 2 tsp
    shaoxing wine or sherry
  • 2 Tbsp
    brown sugar
  • 1/4 tsp
    white pepper
  • STIR FRY
  • 4 oz
    rice noodles
  • 1 Tbsp
    olive oil
  • 2 clove
    garlic minced
  • 1 md
    onion sliced
  • 1
    baby bok choy chopped white and green parts separated
  • 4 oz
    shiitake mushrooms chopped
  • 3
    green onions chopped
  • cilantro for garnish

How To Make chicken stir fry with rice noodles

    Mix the chicken cornstarch and oil together in a bowl and set aside. Mix the sauce ingredients together and set aside.

    Cook the noodles according to package directions and drain.

    Place the olive oil in a wok and add the onions and stir fry for 3 minutes. Add the garlic and stir fry 30 seconds. Add the chicken and stir fry 2 minutes.

    Add the white parts of the bok choy and mushrooms. stir fry 3 minutes. Add the green onions and stir fry 30 seconds.

    Add the noodles and sauce and stir to coat all the noodles and veggies in the sauce. Add the green parts of the bok choy and let wilt.

    plate in bowl and garnish with cilantro.
