Just in time for the big game... This is the best dip ever... a crowd pleaser to say the least!!! If you love Greek food, this dip is for you!! Ever wanted a nice bite of chicken soulvlaki with tzatziki sauce to go on forever??? Now you have it, in a dip!! This is a very easy dip to prepare with the end results leaving you "cheering" that it is so good, and have other's CHEERING YOU!!!

Ingredients For chicken souvlaki dip

  • CHICKEN SOUVLAKI
  • 3 md
    boneless skinless chicken breasts (or 2 large) cubed
  • 1/3 c
    fresh parsley chopped fine
  • 1/4 c
    extra virgin olive oil
  • 1/3 c
    lemon juice (i use bottled)
  • 4 clove
    garlic pressed
  • 1 Tbsp
    course sea or kosher salt
  • 1/2 tsp
    black pepper
  • 1 1/2 Tbsp
    dried marjoram
  • TZATZIKI SAUCE
  • 2 c
    sour cream (i used fat free for this part)
  • 2-3 clove
    garlic pressed
  • 2-3 Tbsp
    white wine vinegar
  • 2 Tbsp
    vegetable oil (i used canola)
  • 1 Tbsp
    fresh mint, finely chopped
  • 1 md
    cucumber, peeled, seeded and grated (i used seedless)
  • salt & pepper to taste
  • ADDITIONAL INGREDIENTS

    green onions diced finely
  • 2-3 Tbsp
    regular sour cream

How To Make chicken souvlaki dip

    Place all wet and dry ingredients for the marinade in a ziplock bag.

    Cube your chicken breasts, place in marinade and seal. Using your fingers, make sure all surfaces of chicken have been coated with marinade. Place in fridge, flat for 2-4 hrs.

    As chicken is marinading, make your tzatziki sauce. *While pressing the garlic for the marinade, also press for the sauce*. Grate your cucumber using a mini chopper or silver bullet, much easier, trust me! Drain in a small sieve. In a medium bowl, add the rest of the ingredients, finally add your cucumber and salt & pepper to taste. Cover with saran wrap, place in fridge and chill.

    When chicken is ready to bake, preheat oven to 350F. On a small roasting pan add your chicken and all the marinade. Bake for approximately 20-25 minutes. Take carefully out of the oven.

    Pour marinade broth into a microwave safe container. Return chicken into oven for another 15 minutes. Microwave the broth for 2-2:30 minutes to make sure chicken marinade broth is well cooked. Set aside.

    Remove chicken from oven. Let cool for a few minutes. In a food processor, add chicken cubes, and a drizzle of the cooked marinade broth. Pulse on low for till chicken starts to break down. Add the rest of the marinade broth and pulse till chicken has been broken down, is now a fine "glob ball like" mass.

    Add the ground chicken soulvaki to the tzatziki sauce, and mix well. Add the green onions and 2-3 Tbls of full fat sour cream for creaminiess. Place in a pretty bowl and serve with your favorite bread, crackers or vegetable crudites!! Enjoy!!
