Ingredients For chicken soup for dummies

2 can32 oz cans chicken broth

1 1/2 lbchicken breast tenders or nuggets, cut in bite size pieces

3 clovegarlic, minced

1/2 cchopped onions

3 Tbspextra virgin olive oil

5 smpotatoes, peeled, cut in half or thirds

40 smbaby carrots
-
2 ccooked orzo, rice, or other small pasta, drained, rinsed
How To Make chicken soup for dummies

1Heat olive oil in a 6-8 qt pot over medium heat. Add minced garlic. Saute until just beginning to brown. Add onions, saute until translucent

2Add chicken broth and bring to a boil. Turn heat down to medium, add chicken, potatoes, and carrots. Simmer, stirring occasionally, until vegetables are tender and chicken is cooked, about 45 minutes.

3Just before serving, add cooked orzo, rice, or other pasta. I used thin spaghetti, broken into 2 inch size pieces. Stir to mix. Serve soup with salt and pepper to taste, and grated parmesan cheese, if desired.
