Ingredients For chicken & shrimp spanish rice

1 pkgspanish rice mix
-
8 ozboneless, skinless chicken breasts, cut into 1" pieces

1green bell pepper, chopped
-
1/2 cred onion, chopped
-
114-1/2 oz can whole tomatoes, cut up
-
1/4 cchicken broth
-
1 tspminced garlic
-
8 ozlg shrimp, peeled, deveined
-
1 cfrozen peas, thawed
-
14 oz can diced green chiles
-
3/4 tspdried thyme
-
salt & pepper to taste
How To Make chicken & shrimp spanish rice

1Prepare rice as directed on pkg. Speay a lg skillet w/ cooking spray.

2Place skillet over medium heat. Add chicken, green pepper, onion and thyme to skillet. Cook until chicken is no longer pink.

3Stir in undrained tomatoes, broth and garlic. Bring to boil, reduce heat and simmer for 10 mins. Add shrimp, peas and chiles. Cook, stirring for about 5 min, or until shrimp are pink. Season w/ salt and pepper. Serve mix over rice.
