Ingredients For chicken scampi

  • 4
    chicken breasts, boneless and skinless
  • 2 Tbsp
    lemon juice
  • 3 clove
    garlic, minced
  • 2 oz
    olive oil
  • 1 c
    flour
  • 1 1/2 Tbsp
    parsley flakes
  • 1 stick
    butter
  • salt and pepper to taste

How To Make chicken scampi

  • 1
    Cut chicken into bite-size pieces.
  • 2
    Coat chicken flour by shaking in bag.
  • 3
    Heat olive oil in skillet over medium heat.
  • 4
    Saute chicken until browned.
  • 5
    Add butter, garlic, salt, pepper, and parsley.

    Sprinkle lemon juice and cover tightly to steam.

    Simmer on low for 15-20 minutes.

    Serve over hot cooked angel hair pasta or rice.
