I made this the other day over the open fire in my Dutch oven. It is very easy to make and has great flavor. Got this out of my Cow Boys Cookbook.

Ingredients For chicken scacchi. by bob w.

1/2 cchopped onions

1/4 cchopped green peppers.

1/2 csliced button mushrooms

1/2 stickbutter
-
1/4 colive oil, light
-
6-8chicken breast halves, skinless and boneless

1 cwhite wine, medium
-
1 8oz cantomato sauce, italian seasoned
-
4 Tbspsoy sauce, light

salt and pepper, totaste.

1In a large cast iron skillet. add 1/4 of buttes and 2/4 of olive oil. Saute onions, sell peppers, and mushroom for 3-4 minutes. Remove and place on a plate. In the skillet add remaning butter and oil. salt and pepper chicken breast.. Brown in skillet on all sides.. Add wine tomato sauce soy sauce onions, peppers, and mushrooms.. Simmer for 1-1 1/2 hours... Serve over hot cooked rice or noodles
