This summer we really enjoyed making kebabs and this was one of of favorites. This picture and recipe is from the Relish magazine I hope you like them as much as we have.

Ingredients For chicken satay with peanut sauce

810 inch bamboo skewers that have been soaked in water for at least 30 minutes

1 1/2 lbboneless, skinless chicken breasts, cut into 1-inch strips

2 Tbspfresh lime juice

1 Tbspolive oil
-
1/2 tspsea salt
-
1/4 tsppepper
- SAUCE:
-
1/4 ccreamy peanut butter
-
2 1/2 Tbsphoisin sauce
-
1 Tbspfresh lime juice
-
1 tspchili-garlic sauce
-
3/4 cwater
How To Make chicken satay with peanut sauce

1Weave chicken pieces onto skewers. Combine lime juice, oil, salt and pepper and brush on skewered chicken pieces.

2Heat grill to medium-high.

3Prepare the sauce at this time by warming peanut butter in a small bowl in the microwave. Whisk in hoisin sauce,lime juice and chili-garlic sauce. Add water(more or less depending on your desired thickness.

4Lightly oil your grill and grill the skewers for about 3 minutes per side or until the chicken is thoroughly cooked. Serve with the peanut sauce, goes great with a nice basmati or jasmine rice. For a real nice change try using coconut water to cook your rice in to serve with these kebabs.
