chicken saltimbocca panini

This panini is so flavorful and a great way to use left over chicken. If you don't have a panini press, don't worry you can either weight it down with a cast iron pan or a brick covered in aluminum foil. Heat through until cheese becomes melty and bread crisps outside! Ingredients For chicken saltimbocca panini

foccaccia bread
-
left over chicken breast sliced
-
fresh mozzarella, sliced (don't slice too thick)

fresh basil leaves
-
few slices of thinly sliced proscuitto

jar of roasted red peppers
-
3 Tbspmayonnaise
-
pinch of dried basil
-
juice of 1/2 a lemon (probably won't need the entire 1/2 of juice)

pinch salt and pepper
-
granulated garlic
-
butter or olive oil to brush on the top before putting in the pan
How To Make chicken saltimbocca panini

1Plug in the panini press or turn on your pan. Make them mayo by combining lemon salt pepper and pinch of dried basil and a pinch of ganulated garlic and stir

2cut the bread in 1/2 and smear both sides of the bread with the mayo.

3place the sliced chicken on the bottom 1/2 of the bread

4top it with the sliced mozzarella

5top with the basil leaves

6top with the proscuitto
-
7top with the thinly sliced red peppers

8place the other 1/2 of the bread on top of the sandwich and brush on a little butter

9place it in the panini maker and press down. Let cook a few minutes and turn if needed to get a flat sandwich.
