There is a little cafe here in town that serves this. According to everyone who works there it is a top seller. I have tried to recreate it as closely as possible & this comes as close as can be without the actual recipe. This is better the next day so it is great for potlucks and such. Hope you enjoy.

Ingredients For chicken salad with cashews

  • 1
    chicken breast, roasted (you can either get one from the deli or roast your own)
  • 1
    celery stalk, finely chopped
  • 1-2
    green onion(s), finely chopped (using stalks)
  • 1/2 c
    chopped cashews
  • 1/2-3/4 c
    mayo
  • salt & pepper to taste

How To Make chicken salad with cashews

    Shred or cube chicken. I usally do a little of both so that the salad stays together but you still get chucks of chicken in the finished product

    add remaining ingredients and mix well. Start with 1/2 c mayo then add as needed to get desired consistancy

    serve on bed of greens or on bread as a sandwich. I find that it goes great with egg bread & baby swiss - the flavors seem to compliment each other well.
