This is one of my favorite family recipes from upstate New York. Its a spicy, creamy take on Italian ziti and fairly easy to put together. My mom makes sure its always on the table at every family get together!

Ingredients For chicken riggies

4 Tbspolive oil
-
1/4 cbutter, melted

1 Tbspminced garlic
-
1 mdonion
-
2 lbchicken,cubed

4 ozhot cherry peppers, canned

1/2 ctomato sauce
-
1/4 ccooking sherry
-
1 ptheavy cream
-
1 lbrigatoni pasta, cooked
How To Make chicken riggies

1Saute onion and garlic in oil over medium heat.

2Add uncooked, cubed chicken to onion mixture and cook until tender.

3Add chopped peppers, tomato sauce, sherry and simmer for 10 minutes.

4Fold in heavy cream and simmer for 10 more minutes.

5Salt and pepper to taste.

6Toss in cooked pasta. *Variation: Place finished pasta in greased casserole dish and cover with mozzarella cheese. Cook until cheese is melted. Ready to serve!
