2 lbchicken breast filets

1 stickbutter

3lemons

3 Tbsplemon zest, grated

2 Tbspcapers

1 sprigparsley

salt & pepper to taste

1 cflour

3 Tbspolive oil

2 cwhite wine
How To Make chicken piccata
-
1gently pound chicken fillets, lightly drench in flour

2in a large skillet, melt 1/4 of the butter stick with some of the olive oil....brown chicken ( about 2 mins on each side)remember chicken should be thin... brown in small batches... keep adding butter & olive oil, as needed

3after all chicken is browned on each side...place aside...to the butter,olive oil drippings.... add lemon zest, lemon juice, capers parsley & white wine....scrape bottom of pan...(that's where all the flavor is)...place browned chicken fillets back and simmer for like 20 mins... so all the flavors marry
