This is a very simple recipe given to me by my best friend. It is so tasty, I give this recipe to all the new brides when I go to their bridal showers. It is always a huge success!

Ingredients For chicken piccata

1 lbchicken breasts, boneless and skinless, sliced thin

1 cflour, seasoned with salt and pepper

2 Tbspolive oil

2 Tbspbutter, melted

2 clovegarlic, minced
-
1 can4oz - sliced mushrooms
-
2 Tbsplemon juice, or juice from 2 fresh lemons
-
1/2 cwhite wine - i use pinot grigio
-
1/2 cchicken broth, as needed
How To Make chicken piccata

1In a large skillet, drizzle olive oil and melted butter,over low heat, be careful not to burn the butter.

2Dredge chicken cutlets in seasoned flour, and put in pan. Cook 2-3 minutes on each side, until lightly browned. Remove cooked chicken to warm plate.

3If necessary, add a little more butter to skillet, and saute minced garlic and sliced mushrooms. Cook for 2 minutes. Add lemon juice and white wine.

4Add chicken cutlets back to pan, add chicken broth, and cover pan. Simmer chicken for 10 minutes. Sprinkle with parsley for garnish, and serve with rice and vegetable. Enjoy!
