Ingredients For chicken & peppers

1.5-2 lbboneless chicken

1/2 tspeach salt & pepper
-
1/4 colive oil
-
1red bell pepper, sliced
-
1yellow bell pepper, sliced
-
1/4 lbbacon, chopped
-
1 Tbspgarlic, sliced
-
1/2 cwhite wine
-
15 ozdiced tomatoes
-
1 Tbspthyme
-
1 tsporegano, dried
-
1/2 cchicken stock
-
2 Tbspcapers
-
1/8 cparsley, chopped
-
1 lbegg noodles, or pasta of choice
How To Make chicken & peppers

1Cook egg noodles in a pan of water

2Season chicken on both sides with salt & pepper. Slice chicken against the grain into strips

3Heat olive oil in a skillet. Add the bacon and cook until crisp, roughly 5 mins. Remove bacon from pan. Brown chicken on both sides & remove from pan.

4Add the peppers to the skillet. Sauté until tender & beginning to brown on the sides. Add garlic & cook 1 minute more.

5Deglaze the pan with the white wine. Add diced tomatoes, thyme & oregano. Heat through.

6Return chicken to the pan along with chicken stock. Bring to a boil & cook until chicken is done.

7Dress with capers, parsley & bacon. Serve over noodles.
