This is a tangy, tasty & what’s more EZ dish to throw together in one pan.

Ingredients For chicken & peppers

  • 1.5-2 lb
    boneless chicken
  • 1/2 tsp
    each salt & pepper
  • 1/4 c
    olive oil
  • 1
    red bell pepper, sliced
  • 1
    yellow bell pepper, sliced
  • 1/4 lb
    bacon, chopped
  • 1 Tbsp
    garlic, sliced
  • 1/2 c
    white wine
  • 15 oz
    diced tomatoes
  • 1 Tbsp
    thyme
  • 1 tsp
    oregano, dried
  • 1/2 c
    chicken stock
  • 2 Tbsp
    capers
  • 1/8 c
    parsley, chopped
  • 1 lb
    egg noodles, or pasta of choice

How To Make chicken & peppers

    Cook egg noodles in a pan of water
  • 2
    Season chicken on both sides with salt & pepper. Slice chicken against the grain into strips
  • 3
    Heat olive oil in a skillet. Add the bacon and cook until crisp, roughly 5 mins. Remove bacon from pan. Brown chicken on both sides & remove from pan.

    Add the peppers to the skillet. Sauté until tender & beginning to brown on the sides. Add garlic & cook 1 minute more.

    Deglaze the pan with the white wine. Add diced tomatoes, thyme & oregano. Heat through.

    Return chicken to the pan along with chicken stock. Bring to a boil & cook until chicken is done.

    Dress with capers, parsley & bacon. Serve over noodles.
