I also add some pine nuts at the end if I happen to have any on hand. It is also one of the only ways I can get my family to eat spinach.

Ingredients For chicken penne pasta bake

  • 1 1/2 c
    multigrain pasta (i typically like to use bowtie pasta)
  • 1 pkg
    spinach (9oz)
  • 1 lb
    chicken breast, diced into pieces
  • 1 tsp
    dried basil leaves (or more)
  • 1 jar
    spaghetti sauce
  • 1 can
    diced tomatoes, drained
  • 3 oz
    cream cheese
  • 1 c
    shredded mozzella
  • 2 Tbsp
    parmesan

How To Make chicken penne pasta bake

    Heat oven to 375. Cook pasta adding spinach at the last one minute of cooking.

    Cook chicken and basil in large skillet. Add spaghetti sauce, and tomatoes; bring to a boil. Simmer 3 minutes and stir in cream cheese until melted.

    Drain pasta, return to pan. Stir in chicken mixture and 1/2 cup mozzarella. Pour into 2 qt. casserole. Bake for 20 minutes and sprinkle with remaining cheese until melted.
