I found a version of this recipe in a food magazine and adapted it to be my own. It's a Family Night Dinner favorite alternative to grilled chicken.

Ingredients For chicken patties

  • 1 lb
    ground chicken or turkey
  • 1
    egg, slightly beaten
  • 1 tsp
    spicy brown or dijon mustard
  • 1/2 tsp
    salt
  • 1/4 tsp
    cayenne pepper
  • 1 1/2 Tbsp
    minced dried onion
  • 2 Tbsp
    dried parsley
  • 1/3 c
    mayonnaise
  • 2 Tbsp
    fresh lime juice (about 1 lime)
  • 1
    sleeve of buttered cracker rounds, crushed
  • non-stick cooking spray

How To Make chicken patties

    Preheat oven to 350 degrees.

    In a large bowl, combine first 9 ingredients and 1/3 cup cracker crumbs; mix well with a fork. Mixture will be extremely wet. Form chicken mixture into 6 patties. Coat each patty in remaining cracker crumbs. Place patties on a plate, cover with wax paper and refrigerate for about 20 minutes.

    Spray an oven proof skillet with cooking spray and heat to medium high heat. Add chicken patties and cook on each side for 2 minutes to brown. Move skillet to the oven and continue to cook patties for approximately 20 additional minutes or until chicken is no longer pink.
