My family loves Italian food and I love to make it for them. Of all the Italian dishes I make, this is my favorite. I hope you enjoy it! Disclaimer: I have always used recipes as a guide and use my instincts and experience to alter or omit ingredients as I cook. Ingredients For chicken parmigiana~robynne

  • 2 clove
    garlic, minced
  • 1 stick
    butter, melted
  • 1 c
    panko bread crumbs
  • 1/3 c
    parmesan cheese, grated
  • t Tbsp
    fresh parsley or 1 teaspoon dried parsley
  • 1/4 tsp
    salt
  • 1/4 tsp
    onion powder
  • 1/4 tsp
    granulated garlic
  • 1/2 tsp
    dried oregano
  • 1/8 tsp
    dried thyme
  • 1/8 tsp
    dried basil
  • 1/4 tsp
    black pepper
  • 2 lb
    boneless, skinless, chicken breast
  • (pound breast with mallet to 1/4 inch thick)
  • SAUCE
  • 2 clove
    garlic, minced
  • 1/4 c
    olive oil, extra virgin
  • 28 oz
    crushed tomatoes, canned
  • 1/2 tsp
    dried basil
  • 1/4 tsp
    dried oregano
  • 1/4 tsp
    brown sugar
  • salt and pepper to taste
  • TOPPING
  • 1-2 c
    mozzarella cheese, shredded
  • sprinkle with dried parsley

How To Make chicken parmigiana~robynne

    Preheat oven to 450F degrees
  • 2
    Combine: minced garlic and melted butter in a bowl; set aside. In another bowl mix bread crumbs, parsley and next 10 ingredients.

    Dip chicken breast in butter and garlic mixture and then in bread crumb mixture.

    Arrange in 9 X 13 baking dish; leaving room between pieces. Drizzle with remaining butter and garlic mixture.

    Bake 20 minutes or until chicken is cooked through and juices run clear. In the meantime make sauce by combining ingredients and simmering for 10 minutes. Remove from heat and set aside.

    When chicken is crispy and cooked through, spoon sauce on top of chicken. Now top with mozzarella cheese and parsley.

    Broil for 3-5 minutes until cheese is bubbly and begins to brown. Remove from oven and serve with your favorite pasta and remaining sauce.
