I am always looking for meatloaf recipes to fix and invite my mother in law over to try. Meatloaf is her favorite entree! I found this one and tweaked it to my liking.

Ingredients For chicken parmesan meatloaf

  • 3 lb
    ground chicken
  • 2
    eggs, lightly beaten
  • 1 1/2 can
    italian bread crumbs
  • 1 Tbsp
    italian seasoning
  • 2 Tbsp
    minced garlic
  • 1 1/2 c
    grated parmesan cheese
  • 1 c
    marinara sauce
  • 1 can
    shredded mozzarella cheese

How To Make chicken parmesan meatloaf

    Preheat the oven to 350.
  • 2
    In a large bowl, combine the ground chicken, eggs, breadcrumbs, Italian seasoning, , garlic and Parmesan cheese. Mix with your hands.

    Place into a well greased 13x9 pan and shape into a loaf. Top the meatloaf with the marinara sauce.

    Bake about 55 minutes. When done remove from oven and add the mozzarella cheese on top. Return to oven until the cheese is melted. Let stand for about 10 minutes before slicing and serving.
