Mmm Mmm good!! I found this when we were living in a hotel (long story) and we didn't have an oven to cook with. You'll need some kind of microwave safe deep covered baker. I have the one from the Pampered Chef. This recipe is also from the Pampered Chef. If you have that then this whole recipe can be done in the microwave. So easy, so fast, so good. Great family dinner, great for busy moms like me.

Ingredients For chicken parm soup

3 clovegarlic, minced or pressed

1 1/2 cchicken stock

4 ozfrench bread loaf, cubed 3/4 in.

2 cshredded mozzarella

1 ozgrated parmesan

2 1/2 ccooked chicken, cubed

1 candiced tomatoes with garlic and onion

2 Tbspolive oil
-
2 cmarinara sauce
-
2 Tbspgarlic powder, divided

2 Tbspitalian seasoning, divided
How To Make chicken parm soup

1Toss bread cubes, oil, 1 TB garlic powder, and 1 TB Italian seasoning. Microwave cubes in a microwave-safe deep baker for 4 minutes, stirring every minute, until they start to brown. Let cool on paper towel.

2Stir stock, remaining seasoning and garlic powder, marinara, tomatoes, chicken and garlic together in baker. Microwave covered for 13 minutes.

3Remove from microwave. Stir in Parmesan. Top soup with half the mozzarella, then bread cubes, then top with remaining mozzarella. Cover again and let stand for two minutes. Enjoy!
