1 3/4 lbsplit chicken breasts (or 2 lb cut up fryer parts)

1/2 csliced onions

4 Tbspchopped green pepper

1 csliced mushrooms (fresh or canned)
- SAUCE

1 corange juice

3 Tbspsherry

1/2 cwater

1 Tbspbrown sugar (or sugar substitute)

1/4 tsppepper

1 tspgrated orange rind

1 Tbspflour

2 tspdried parsley flakes

How To Make chicken parisien, ma

1Place chicken pieces skin side up in shallow baking dish. Add onions, pepper and mushrooms. Combine sauce ingredients in shallow saucepan. Cook and stir over moderate heat until mixture thickens and bubbles. Pour over chicken. Bake in a preheated 375 degree oven for one hour or more, basting occasionally, until tender. Sprinkle with paprika and garnish with fresh orange slices if you wish.
