I cut this recipe out of my hometown newspaper many years ago.My husband and kids all love it.My son is a great rice lover so this went over big with him.

Ingredients For chicken medley

  • 2 1/2 lb
    chicken,cut up
  • 1 1/2 c
    uncooked rice
  • 1 1/2 c
    water
  • 1
    envelope(4 serving sz.)onion soup mix
  • 1 can
    (14 1/2 to 16 ozs.)ready seasoned stewed tomatoes
  • 1/2 tsp
    pepper

How To Make chicken medley

  • 1
    Place chicken,skin side up,in a shallow baking dish.Bake,uncovered,at 450 degrees for 30 min. or until browned.

    Sprinkle with rice.
  • 3
    Bring remaining ingredients to a boil.Pour over chicken mixture.Stir.

    Cover,reduce the heat to 350 degrees and bake 30 min. longer or until rice is tender and liquid is absorbed.Garnih with chopped parsley,if desired.
