Ingredients For chicken & marinated artichoke casserole

2 jar12 oz. jar marinated artichokes, coarsely chopped

4 cchicken breast, cooked and cubed

2 cancream of chicken soup
-
1/2 cmilk
-
1 cmayo
-
1 tspfresh lemon juice
-
1 tspcurry powder (or more to taste)

1 1/4 csharp cheddar cheese, shredded
-
1/2 - 1 lbmushrooms, sauteed in butter until golden brown

2 crice, cooked
-
3/4 cbread crumbs, seasoned
-
2 Tbspbutter, melted

parmesan cheese to sprinkle on top
How To Make chicken & marinated artichoke casserole

1Drain artichokes well and coarsely chop. Add them to the bottom of a 9 x 13 baking pan.

2Next, layer rice and chicken on top of artichokes.

3Saute mushrooms in a little butter until they have released their juices and are light golden brown. Add them on top of chicken and rice.

4Mix together soup, milk, mayo, lemon juice, curry powder and 3/4 cup of the cheese. Mix thoroughly. Pour mixture over the mushrooms and sprinkle remaining cheddar cheese on top.

5Toast bread crumbs in melted butter and toss with parmesan cheese -- spread on top of casserole.

6Bake at 350 degrees for 30 minutes.
