Ingredients For chicken marengo, ma

  • 6
    whole chicken breasts
  • 1 clove
    garlic
  • salt, pepper, paprika
  • 2 tsp
    lemon juice
  • flour
  • 1/2 c
    butter
  • 1/2 c
    white wine
  • 1 lb
    sliced mushrooms
  • 1 tsp
    sugar
  • 1/2 tsp
    ginger
  • 20
    sliced green olives
  • 20
    sliced pitted black olives
  • 1 1/2-2 c
    chicken stock
  • 1 c
    sour cream

How To Make chicken marengo, ma

    Clean and dry chicken. Rub with garlic, salt, pepper and paprika and lemon juice. Dust with flour. Heat butter and brown chicken, As pieces are browned, remove and place in large baking dish or roaster. When all browned, stir in enough flour to make a roux, about equal flour to amount of fat in skillet. Add 1 1/2 cu chicken stock and make a gravy. Add remaining ingredients and remove from heat, adding wine last. Ladle gravy over chicken pieces. Bake at 350 until tender, basting from time to time with chicken stock or win. Five min before removing from oven, pour over chicken 1 c sour cream; arrange chicken on platter and spoon gravy over it.
