Ingredients For chicken lucia

2 lbchicken breasts, boneles, skinless and cut in 1 1/2" chunks

1 cwater

3 Tbsplemon juice

14 ozartichoke hearts, drained and halved

1 tspdried oregano
-
2 lggarlic cloves, minced
-
1/4 colive oil
-
"just a pinch" of pepper
-
"just a pinch" of salt
-
flour
-
1/4 cparsley, fresh and chopped
How To Make chicken lucia

1Season the flour with salt and pepper and dredge chicken in flour mixture.

2Heat the oil and garlic in a large skillet; When hot, add the chicken.

3Sprinkle with oregano and simmer over medium-high heat 3 to 4 minutes.

4Add the artichoke hearts, drizzle with lemon juice and add water.

5Cover and simmer until the chicken is done, 5 to 10 minutes, adding parsley in the last couple of minutes.
