Ingredients For chicken livers on toast

  • olive oil
  • 2 oz
    pancetta
  • 6 oz
    chicken livers, sinew removed and chopped
  • 1 tsp
    flour
  • salt and pepper, to taste
  • nutmeg, to taste
  • 1/4 c
    sherry
  • 1/4 c
    chicken stock
  • 1/4 c
    plus 1 Tbsp heavy cream, divided
  • 1
    egg yolk
  • 4 slice
    whole wheat bread, toasted
  • micro greens, for garnish

How To Make chicken livers on toast

    Cook the pancetta until crisp. Add the chicken livers and olive oil. Cook about 5 minutes. Sprinkle flour over the livers; stir. Season with salt, pepper, and nutmeg.

    Add the sherry and let evaporate. Add the chicken stock and cook 3 minutes. Add the 1/4 cup heavy cream. Beat the egg yolk with the remaining heavy cream and whisk into the mixture.

    Spoon onto toast and garnish with micro greens.
