Ingredients For chicken livers on toast

2 ozpancetta

6 ozchicken livers, sinew removed and chopped

1 tspflour

salt and pepper, to taste

nutmeg, to taste

1/4 csherry

1/4 cchicken stock

1/4 cplus 1 Tbsp heavy cream, divided

1egg yolk
-
4 slicewhole wheat bread, toasted

micro greens, for garnish
How To Make chicken livers on toast

1Cook the pancetta until crisp. Add the chicken livers and olive oil. Cook about 5 minutes. Sprinkle flour over the livers; stir. Season with salt, pepper, and nutmeg.

2Add the sherry and let evaporate. Add the chicken stock and cook 3 minutes. Add the 1/4 cup heavy cream. Beat the egg yolk with the remaining heavy cream and whisk into the mixture.

3Spoon onto toast and garnish with micro greens.
