Ingredients For chicken kabobs

    chicken breasts,boned,skinned and cut into 1 inch chunks
  • 12
    cherry tomatoes
  • 2
    small onions, quarted lengthwise
  • 1
    large green pepper, cut into 1 inch chunks
  • 1/4 c
    oil, preferably olive oil
  • 2 Tbsp
    soy sauce
  • 2 Tbsp
    lemon juice
  • 1/2 tsp
    whole thyme leaves
  • 1/4 tsp
    pepper

How To Make chicken kabobs

    Thread chicken, tomatoes, onion quarters, and green pepper alternately on six 8 inch skewers. (use wooden skewers if possible), arrange kabobs in a 10 inch round baking dish.

    Combine all remaining ingredients in a small bowl. Brush on kabobs. Microwave, uncovered, at power level high for 9 to 11 1/2 minutes, or until chicken and vegetables are cooked, rearranging the skewers once basting twice with marinade.
