Ingredients For chicken in milk

  • 1
    whole chicken about 2 to 3 pounds
  • olive oil
  • salt
  • 10 clove
    garlic unpeeled
  • 2 lg
    lemons zest only
  • 1 stick
    cinnamon
  • 2 sprig
    sage leaves
  • 1/2 gal
    milk
  • 1/2 c
    white wine

How To Make chicken in milk

    Place a dutch oven on stove and add the oil. Sprinkle the chicken with salt. Brown the chicken on all sides on top of stove. Add the milk, garlic, lemon zest, sage leaves, and cinnamon stick to the pot. Place in the oven at 350 degrees. Bake for 1 to 1/2 hours. Remove the chicken and set aside to rest.

    Strain the milk sauce and discard the solids. Add the strained sauce to a saucepan and add the white wine. Bring to a boil and reduce to a simmer and simmer until reduced and thickened a bit.

    Serve the sauce over the chicken or on potatoes.
