Ingredients For chicken hearts with mushrooms and onions

  • 1/2 c
    butter
  • 1/3 c
    flour
  • 1 Tbsp
    olive oil
  • 1 md
    onion, chopped
  • 8 oz
    mushrooms, sliced
  • salt and pepper
  • 4 clove
    garlic, minced
  • 2 c
    chicken stock
  • 2 c
    chicken hearts, trimmed and cut in half
  • rice, noodles, or mashed potatoes for serving
  • fresh parsley, for garnish

How To Make chicken hearts with mushrooms and onions

    Melt the butter in a saucepan. Whisk in the flour. Keep whisking until the roux turns a medium brown to dark brown color, about 10 minutes. Remove from heat and set aside

    Add the oil to another saute pan. Add the onion and mushrooms and cook about 6 minutes. Season with salt and pepper. Add the garlic and cook 1 minute. Add the chicken stock and bring to a boil. Add the roux and cook about 5 minutes. Add the chicken hearts and cook 5 more minutes. Taste and adjust seasoning.
