1/2 cbutter

1/3 cflour

1 Tbspolive oil

1 mdonion, chopped

8 ozmushrooms, sliced

salt and pepper

4 clovegarlic, minced

2 cchicken stock
-
2 cchicken hearts, trimmed and cut in half

rice, noodles, or mashed potatoes for serving

fresh parsley, for garnish
How To Make chicken hearts with mushrooms and onions

1Melt the butter in a saucepan. Whisk in the flour. Keep whisking until the roux turns a medium brown to dark brown color, about 10 minutes. Remove from heat and set aside

2Add the oil to another saute pan. Add the onion and mushrooms and cook about 6 minutes. Season with salt and pepper. Add the garlic and cook 1 minute. Add the chicken stock and bring to a boil. Add the roux and cook about 5 minutes. Add the chicken hearts and cook 5 more minutes. Taste and adjust seasoning.
